Line cupcake pans with paper liners.Combine flour, sugar, baking powder, and salt in a large mixing bowl. Add shortening, milk, and vanilla. Beat for 1 minute on medium speed. Scrape side of bowl with a spatula.Add eggs to the mixture. Beat for 1 minute on medium speed. Scrape bowl again. Rufus Plough: I have the best and easiest way ever to make cupcakes: you'll need just 2 eggs, flour, sugar and margarine.First, weigh the eggs together, with their shells on.Then, weigh out each of the other ingredients to the same weight, so if the eggs came to 125g together, you'll have 125g of flour, marg and sugar.Put it all in a bowl (eggs as well now de-shelled ;D), mix it all up and put into cupcake holders/papers! Cook it on gas mark 6 for 10 mins, then check them with something thin- a knitting needle or similar is ideal. If cake mix shows on the needle when you take it out from poking a cake, they are not ready and will usually need about 3/5 more minutes, just judge it on how cooked they are!When done, they should look like mini volcanoes if yours are anything like! mine, and they taste great! Place all ingredients in blelnder container in orderlisted. Cover and blend on high speed, stopping blender occasionally toscrape sides, 45 seconds.(Batter will be slightly lumpy). Pour into paperlined medium muffin cups, 2 1/2x 1 1/4 in., filling each 2/3 full.
